The Cake Specialist, Castlebar

Lee’s tips and advice:

Remember it’s important to choose a cake that’s compatible with the style of the your wedding venue. I like to advise my couples that the cake knife and server are so essential and can be a special keepsake and memory of your wedding.

On Flavours – They are all so delicious and decadent with so many to choose from.

High end choices include delicate sugar peonies or roses and intricate sugarpaste, handmade flowers are a truly beautiful choice. Whilst fresh fruit, berries and flowers to match your bouquet are also perfect options.

On your Wedding Day you should make the first cut in your cake in the lowest cake, as the top tier is usually wrapped and kept for your first anniversary or christening of your first baby. I always encourage my couples to have fun with your wedding cake and choose something that just sets your heart on fire. Its is an important day so why not!

I love to play with textures on cakes, the possibilities are endless. We now offer a new service for couples who choose sugar flowers for their cake. We take them back after the wedding and frame them as a special memento of the day.

Janeys Cakery, North County Dublin

Janes advice:

I encourage couples to think outside the box and have some fun with their cake. The colourful cake with fondant marbling, delicate edible lace and bird toppers was designed by a couple themselves and was very personal to them. I enjoyed working with them to create a unique cake for them.

My most recent two tier is the one with the clear light up acrylic tier in the centre. This added even more of a wow factor with visual effects to a two tier cake and was a great talking point at the wedding.

Pearly Cakes, Blanchardstown

Pearl’s design:

This art deco cake got the best view in the stunning Powerscourt House & Gardens. It’s a two tier sponge cake, finished with fondant and adorned with satin pearl rice paper sails and white macarons. Flecks  of edible gold leaf added a warm golden glow and a touch elegance to this wedding cake masterpiece.

Ruairi’s Kitchen, Cork City

Ruairi’s advice:

I typically recommend a two tier cake for smaller weddings so weddings of 50-100 people. Two tier cakes look more visually appealing than one extra large bottom tier so an 8inch/6inch two tier looks better than a 10inch cake and will feed roughly the same. Pricing varies depending on design, semi naked being the most cost effective, then buttercream and followed by fondant.

If sweet cakes aren’t your thing, how about a fabulous cheese cake? The only problem is you definitely can’t stick to only two tiers! The more, the merrier when it comes to our cheese consumption! Check out these two fab local suppliers…

The Wild Grazer, Kilkenny

The Wild Grazer Top Tips for a ‘Wow Factor’ Wedding Cake:

Choose a minimum of four tiers and ensure you choose cheeses with different flavour profiles, e.g. hard cheeses, soft cheeses and cheeses made from cow, goat or sheep milk. Use cheeses that have different textures, colours and heights to create that wow factor visual. I always recommend adding Cashel Blue to your cake as it ticks all these boxes and is an incredible Irish cheese too! Add flowers and foliage to both the cake and cake table. Adding vases of flowers beside the cake adds depth and height to the overall visual of the display. (Photo credit: Eliza Czuba)

Cheese and Chutney, Ratoath

Our tips would be to keep the cake simple, let the cheese speak for itself, incorporate the flowers you are using & once cut add your grapes, garnishes etc. We also recommend cutting the cake early and adding the cheese to your canapes!
