Go to a show, go up the Stratosphere for a look (don't bother eating, restaurant isn't good) and head down Fremont Street for the cheesy light show.
There's shopping in the Fashion Show Mall and also a couple of outlets. You could also do a trip to the Grand Canyon but it's an entire day by road, could you take the helicopter trip?
Oh, and you can also gamble

and enjoy the pool and the sunshine!

Get a cab to freemount street. Its a street in old town las vegas which again is packed with casino's and lights but the whole street is covered by thousands of screens and on the hour every hour (after dusk) it play a giant music video, its breathtaking.
Get up early and the hoover dam and grand canyon tour
Hit the Bellagio and Caesars Palace!

walk through all the hotels from the Mandalay down to the end of the strip.
Watch the fountains at the belliago, watch the show at treasure island, eat some krispy kremes from the MGM.
Stock up in Sephora. Get the bus down to freemont st and watch the overhead show, head into the casinos there, they usually still give some free drinks.
TBH unless there is a show you really really want to see they're very overpriced and you will use a full night going to one, we only had 2 nights so didn't bother going to one.
